I love eggs and zucchini so combining them into one recipe was easy.
A fritttta is an egg dish similar to an omlette or crustless quiche with veggies added. I love the farm fresh eggs is get on a regular basis from a neighbouring farm.
Ingredients for one:
- 3 eggs
- 1/2 cup cut up zucchini
- 1 small potato, chopped
- 3 or 4 cherry tomatoes
- sliced mozerella cheese
- sliced mushrooms
- parsley garnish
Pan fry the cubed potatoes in a small amount of olive oil till brown then add veggies and lightly saute. I put these on a piece of paper towel to remove any excess oil.
Mix eggs with a small amount of milk, and add to a lightly greased pan. Cover and let cook for a few minutes. Add veggies evenly over the top, cover and cook a little while longer. Some cooks add the cheese now and then pop under the grill until melted.
I let it cook a bit longer, add the cheese. Be sure all the egg mixture is cooked. Slide out of the pan onto a plate and garnish with parsley.

Did you know that botanically speaking zucchini is actually a fruit along with tomatoes, peppers, cucumbers, beans and others that have seeds inside them. But we call them all vegetables.
