These are the most delicious roasties you can make. I’ve seen a few different recipes to make parmesen roasted potatoes and this is the way I chose to make mine.
- about 15 mini potatoes
- 1 tsp olive oil
- 1/4 tsp salt
- 3/4 tsp paprika
- 1/4 tsp garlic salt
- 3/4 tsp Italian seasoning
- 1/2 cup of parmesan cheese
Wash and dry the mini potatoes. I prefer red or russets for baking as they cook well but stay firm. You can adjust seasonings to suit yourself.
Cut potatoes in half length wise. Put in bowl and add some olive oil and the seasonings and mix well till all potatoes are coated. Make sure to use gluten free seasonings.
Line a baking sheet with parchment paper. This makes the clean up so much easier. Drizzle with olive oil and spread the parmesan cheese .
Put potatoes, cut side down onto the parmesan and bake in a 400F oven for about 30-35 minutes until soft.
Remove from oven and let set for about 10 minutes. This will let the parmesen cheese get crispy.
Serve on their own or with a meal. Gluten free and delicious.
