Recipe: Zucchini Frittata

I love eggs and zucchini so combining them into one recipe was easy.

A frittata is an egg dish similar to an omelette or crustless quiche with veggies added. I love the farm fresh eggs I get on a regular basis from a neighbouring farm.

Ingredients for one:

  • 3 eggs
  • 1/2 cup cut up zucchini
  • 1 small potato, chopped
  • 3 or 4 cherry tomatoes
  • sliced mozerella cheese
  • sliced mushrooms
  • parsley garnish

Pan fry the cubed potatoes in a small amount of olive oil till brown then add veggies and lightly saute. I put these on a piece of paper towel to remove any excess oil.

Mix eggs with a small amount of milk, and add to a lightly greased pan. Cover and let cook for a few minutes. Add veggies evenly over the top, cover and cook a little while longer. Some cooks add the cheese now and then pop under the grill until melted.

I let it cook a bit longer, add the cheese. Be sure all the egg mixture is cooked. Slide out of the pan onto a plate and garnish with parsley.
