Make a delicious broccoli, carrot, cheese and egg frittata. Naturally gluten free and delicious.
A frittata is an egg dish similar to an omelette or crustless quiche with veggies added. I love the farm fresh eggs I get on a regular basis from a neighbouring farm in the warmer months.
Inregdients:
- 3 or 4 eggs
- 1 1/2 to 2 cups of cooked broccoli
- 1/2 cup grated carrots
- 1/2 cup grated cheese
Butter a baking dish and add all the ingredients. Mash the broccoli with a fork and then mix all the ingredients together.
Usually I cook a frittata in a frypan, like the zucchini frittata, but this recipe is baked in the oven.
Bake in a 350 F. oven for about 30 minutes or until the egg mixture is cooked.
Cool for a few minutes before serving. Use a spatula to loosen the frittata from the edge of the baking dish.
Serve on its own or with a salad. The leftovers heated up nicely the next day. Delicious.
Make it your own by varying the ingredients. You could add peppers, onions, cubed potatoes, or mushrooms, if you have them in your fridge.
