I love trying new recipes, especially one you cook all in one dish. This one came from The English Kitchen and was delicious.
I started with veggies that are naturally gluten free – carrot, parsnip, turnip, and potato.
Cut the veggies into small pieces so they roast quicker. After adding some olive oil I like to add some salt & pepper to taste and some dill. Mix well and pop into a 450 F oven. Turn a couple of times during cooking of about 40 minutes or until the veggies are soft.
While the veggies are roasting, I chopped some Schneiders all beef jumbo hot dogs which are gluten free. Most Schneiders hot dogs are gluten free but they do not guarantee that are produced in a gluten free facility. So there could be cross contamination, so the choice is yours if you wish to eat them if you are gluten free.
The hot dogs are added in the last 10 or so minutes of the cooking. Mix all the veggies and hot dogs well.
This dish was enough for 2 people. You could serve baked beans with this if you wanted to. It reminded me of a camping dinner made over an open fire. Another delicious gluten free meal.
