I usually deliberately prepare extra when I cook food. That way I always intentionally have left overs.
The extra food goes into soups and casseroles. Another thing I do is save the water that veggies (potatoes, carrots etc) have been cooked in and I use that liquid as stock in the soups I make.
A favourite of mine is chicken pasta – of course gluten free.

Mix in a bowl
- cooked, chopped chicken breast
- cooked gluten free fusilli, about 35 gm
- cooked veggies
- 2 tbsp mayonaise

It just needs warming in the microwave and I have a tasty meal served with a salad. And don’t forget to top it with some fresh grated parmesan cheese.

Another time I added sliced mushrooms and zucchini and topped it with fresh parsley from the garden. You can add whatever veggies you have available.

You can also use my basic white sauce instead of mayonnaise.
