Chickpeas are naturally gluten free and can be made into soup. A bag of chickpeas will make several pots of soup. If you just want to make one pot of soup you can purchase 1 cup of chick peas at Bulk Barn.
Add a selection of veggies. My choice is diced celery, carrots, pean, green beans, onion, and potato. I freeze many of my veggies and also use frozen veggies. I use about a fist full of each veggie.
Add veggies and 1 cup of washed chickpeas to about 8 cups of water. Cook till all ingredients are soft. I puree most of my soup, you can make it as smooth or chunky as you like.
This makes a delicious and hearty soup.
Another recipe I make is roasted chickpeas. Drain a can of chickpeas and dry and spread onto a cookie sheet lined with parchment paper. Bake at 375 F for about 45 minutes till crispy. While warm toss in a bowl with 1/2 tbsp of olive oil, 1 tbsp of honey, 1/2 tsp cinnamon, 1/8 tsp seasalt. Pop back in the oven for about 10 more minutes. Eat warm.
