I’m using the recipe that came from my friend’s daughter in law, so I know it is a tried and true recipe from her family.
I used a turkey carcass this time, roasted the bones in a bit of olive oil, then boiled in a large pot for several hours. After cooling it was skimmed of any fat and the bones were all removed.
If you have been making soup from the turkey bones then you are making a version of bone broth.
This time I made the bone broth first and then used some of it to make the turkey (left over from Thanksgiving) soup. I froze the remainder of the bone broth and extra turkey soup for enjoying later.
Other turkey recipes included turkey casserole, a turkey version of cottage pie.

- cubed 6 medium potatoes
- 3 stalks of celery
- 2 carrots, diced
- 1/2 sweet onion, diced
- 8 cups of bone broth
- 1 cup frozen peas and green beans
Next time I will use some beef bones to make bone broth for use in my soups.
